Easy Yummy Healthy Muffins That Even the Picky Kids Will Love
I love autumn because it is just perfectly cozy and a great time to make some easy, yummy, healthy muffins for even the pickiest of eaters!
Fall is wonderful. I love the sweaters, the crackling fireplaces and firepits, the hot chocolates, and pumpkin-spice everything.
I also like trying out new recipes and seeing how I can make yummy healthy foods for my family. Let’s face it, life gets hectic with kids and school and extracurricular activities and mornings are always a rush to get out the door.
So here is a easy healthy muffin recipe that I just adore. It is muffin-tastic! It is full of fresh apples, carrots, maple syrup, and even kale protein. There are no added sugars and it is just yummilicious.
I like to make mini muffins because my kids like to grab a bunch on the go. They find them easier to eat too.
Moms, I know we do not have a lot of time to cook or bake, so I tend to make bigger batches and then freeze the extras for an easy meal another day. Because, it is always nice when we do not have to make a meal, am I right? Plan ahead and life gets a bit easier.
Ingredients
List A –
2 cups of soft margarine from a tub
1 cup maple syrup
2 cups grated carrots
2 cups grated apples
2 cups lemon yogurt
1 cup sour cream
List B –
2 cups whole-wheat pastry flour
2 cups all-purpose flour
2 teaspoons of each: baking soda, baking powder, all-spice, cinnamon
½ teaspoon of salt
1 pack of Protein & Kale

Step by Step Instructions
Step 1
Preheat oven to 350 and spray muffin trays with nonstick cooking spray.
Step 2
In a large bowl mix “List A” with a spoon. Then mix all of “List B” in a separate bowl and combine together.
Step 3
Drop spoonfuls in the muffin trays and bake mini-muffin trays for about 9-10 minutes checking with a toothpick that centers are cooked, and stick comes out clean. Regular sized muffin tray will need to bake for about 20-25 minutes.
Step 4
Let them cool for two minutes in the muffin trays and then place them on a wire rate to cool completely.
Step 5
Enjoy as is or spread some whipped cream cheese frosting on top and bite into a taste of heaven!
